Ingredients
- 12 large eggs
- ½ cup K&D Mercantile Estate Olive Oil
- ¼ cup white balsamic vinegar
- 3 teaspoons salt
- Fresh chives or paprika, for garnish (optional)
Method
Hard boil the eggs. Once cooked, allow the eggs to cool, then peel.
Cut the eggs in half lengthwise, and carefully remove the yolks.
Place the yolks in a food processor, and pulse, slowly adding the olive oil, vinegar and salt.
Taste the mixture, and adjust the seasoning to your preference.
Fill the egg halves with the yolk mixture using a pastry bag or spoon. Garnish with fresh chives or paprika, if desired.
Makes 24 portions.
